Spring onion and coriander cheese pancakes
Ingredients
- 250 g ricotta cheese
- 1 egg
- ½ cup S.R flour
- 1 tbsp grated parmesan cheese
- ½ cup milk
- 2 tbsp chopped coriander
- 1 bunch of springs onions
- salt and pepper
- 1 tbsp butter
Instructions
- In a large bowl whisk ricotta cheese until smooth
- Blend in one beaten egg
- Add S.R. flour and whisk until smooth
- Add parmesan cheese
- Blend in half a cup of milk, Whisk until smooth
- Fold in coriander and spring onions, season with salt and black pepper
- Place butter in a lightly oiled pan, Cook to brown on both sides
- Suitable for freezing
