Minted snow peas
Ingredients
- 200 g snow peas
- ¼ cup toasted pine nuts
- 1 clove garlic, minced
- 2 tbs olive oil
- 1 tsp lemon or lime juice
- 1 tsp runny honey
- 8 chopped mint or spearmint leaves
Instructions
- heat olive oil in pan
- add snow peas and garlic. Cook 1-2mins
- add lemon juice and honey
- toss in toasted pinenuts
- Take off heat. Add chopped mint. Serve immediately
