Chocolate cream
Suitable topping for fresh or canned fruit. Layer sliced pears with chocolate cream in a parfait glasses mins Chill for 15. Or spread chocolate cream on a waffle and top with fruit or berries. Or grill banana and top with chocolate cream
Ingredients
- 130 g plain dark chocolate
- 3 duck eggs
Instructions
- Break chocolate into small pieces and put in a basin
- Melt over a saucepan of hot water, remove from heat, whisk in the egg yolks and beat until thick and creamy
- When cool, fold in stiffly beaten egg whites. Store in sealed container in fridge
