Curried egg and potato salad
Ingredients
- 4 large potatoes
- 1 cup mayo
- 1 tsp curry powder
- salt and pepper
- 1 red onion diced
- ½ cup thinly slice celery
- 2 tbs grated carrot
- 4 hard boiled eggs
Instructions
- potatoes, peeled and placed in boiling water until tender
- Drain, cool and chop into bite size pieces
- Place in a bowl and pour over, 1/3rd cup french dressing. cover and chill
- In a bowl blend together, mayo, curry powder, salt, pepper. Add onion diced, thinly slice celery, grated carrot
- Fold in, potatoes. Gently fold in four hard boil eggs, chopped
- Let stand for one hour. Serve on lettuce leaves
