Broccoli soup

Ingredients
  

  • 1 medium onion, diced
  • 1 stick celery, sliced
  • 1 small potato, peeled and diced
  • 1 head of broccoli
  • 1 tbs lemon juice
  • 1 tsp butter
  • 1 tbs lemon thyme chopped
  • 1 tbs parmesan cheese
  • 5 cup chicken stock

Instructions
 

  • Melt butter in saucepan. Add onion n and celery. cook 1 min
  • Add remaining ingredients. Cook over low heat for 20mins
  • Strain 1/2 cup of stock from soup
  • Puree soup mix
  • Stir in strained stock
  • Stir in parmesan cheese
