Cauliflower curry
Ingredients
- 2 tbs oil
- 1 apple, peeled and diced
- 2 rashers of bacon, chopped
- 1 large onion, diced
- 1 stick celery, finely slice
- 1 tsp curry powder
- ½ tsp turmeric
- 2 tbs plain flour
- 1 tbs cream or yoghurt
- salt and pepper to taste
- 2 cup chicken or vegetable stock
- 1 cauliflower , broken in pieces and cooked
- 2 cup cooked rice
Instructions
- Heat oil in pan over low heat
- Add bacon, onion and celery. Cook 1 min
- Add spices and flour. Gradually add in stock, cook until sauce thicken
- Add seasoning
- Stir in cream or yoghurt
- On a serving place warm rice. Top with warm cauliflower
- Pour sauce over cauliflower and rice
