A phone call tells you that unexpected visitors will be knocking at your door in approximately fifty minutes. And within the next ninety minutes it’s dinner time. So what to do? Invite them to stay for dinner?
I rustled through draws and shelves in the pantry in search of inspiration. None appeared.
I turned to the freezer to see what staples I had in store. Boneless chicken pieces……..there’s a start.
Returning to the pantry I looked for ingredients that would create a delicious casserole or stew.
A large can of apricot halves caught my attention. A packet of french onion soup was also within my glare.
I hurried to the kitchen and began chopping vegetables (what I had in store).
Serves 4 to 6 people
1 large onion, chopped in large chunks
1 red capsicum, chopped
2 stick of celery, sliced
Chop chicken in chunks. Add 2 tspn wholemeal plain flour. Toss.
Empty juice of canned apricot halves in a bowl
Add french onion soup mix to juice.
Add tablespoon apricot jam and a tsp minced ginger to the juice mix.
Melt a little butter in pan.
Add quarter tspn cinnamon and same of turmeric. Add one tspn coriander powder.
Over low heat cook for one minute.
Add one tspn minced garlic.
Add vegies to pan and cook for two minutes.
Add chicken, toss to seal.
Add juice mix.
Add one tablespoon honey. Stir.
Cover. Cook over low heat 20mins.
Slice 8 apricot halves and add to pan in the last five minutes of cooking.
Serve with rice.
REMAINDER OF APRICOTS for Dessert.
Slice apricot halves into three.
Toss 2 tablespoons almond flakes and 2 tablespoons of shredded coconut into dry pan. Heat until coloured slightly. Empty onto a plate to cool.
Over low heat melt one tablespoon butter and one tablespoon honey and quarter teaspoon of cinnamon. Add sliced apricots. Gently toss.
Stir in a quarter cup of cream. Add coconut and almonds. Cook one to two minutes only.
Serve with ice cream or on top of a pancake.
Note: I always keep a batch of pancakes frozen in the freezer as they are so versatile and often a speedy solution to dessert or lunch when stuffed and served with salad.
A hurried process turned out to be a memorable evening with delicious food.
Laughter, music, good friends and good food………………….. A combination made in heaven.
