
Turnip and apple soup
Ingredients
- 3 medium turnips, peeled and diced
- 1 medium potato, peeled and diced
- 1 apple, peeled and diced
- 1 stick celery, sliced
- 1 large onion, diced
- 1 tbsp grated ginger
- 1 tbsp garlic, crushed
- ½ tbsp curry powder
- 4-5 cups chicken stock
- salt and pepper to taste
- 1 tbsp butter
Instructions
- In a large saucepan over low heat, melt butter.
- Add onion and celery, garlic, curry powder and ginger.
- Cook 1 min.
- Add turnip and potato and apple.
- Cook 2 mins.
- Add stock and seasonings.
- Cook 20 mins.
- Allow to cool for 5 mins.
- Strain off half a cup of stock sandpit aside.
- Puree soup.
- Stir in the reserved stock.
