NASHI PEAR WALNUT and RAISIN CAKE
Place 2 diced Nashi pear in a bowl.
Add half cup brown sugar and a squeeze of lemon juice. Stir to coat fruit
Stand 5 mins.
Meanwhile beat one large egg with two tablespoon of honey.
Stir into the nashi pears
one half cups all purpose flour, 1 tspn baking soda, half tspn salt, 1 tspn. cinnamon, quarter tspn nutmeg, large pinch powdered cloves and half tspn mixed spice.
Add to nashi pears. Hand mix thoroughly.
Stir in half cup chopped walnuts, and one cup chopped raisin.
Cook in loaf tin at 180c 35-50mins. Let cool in cake tin for 10mins.
NASHI PEAR CHUTNEY
1kg nashi pear, peeled, cored, chopped
1 large green apple, peeled, cored, chopped
2 large onions diced
1 tblspn grated lemon rind
1 tblspn grated orange rind
Three quarters cup of chopped raisins
One and a quarter cups white vinegar
1 cup of water
half tspn ground ginger
Quarter tspn ground cloves
1 tspn salt
Combine all ingredients in a pot and stir as it comes to the boil. Simmer until thick and syrupy. Approx.50mins. Pour into sterilised `jars and seal. Will keep for months.
NASHI PEAR SAUCE with PORK SAUSAGES
Brown Sausages in a pan Drain off any fat resdue
Add large onion, sliced thinly
Add one cup diced sweet potato
Add two large nashi pears, halved and sliced
Add half cup white vinegar and two tspns brown sugar, half tspn ground cloves, half tspn group cardamon and quarter tspns nutmeg
Cover and simmer unbtil sweet potato has softened.
NASHI PEAR SALSA
Good with Salmon, Oily fish, Pork and Ham
Place ingredients in a large bowl with lid
2 nashi pear, cored and diced
2 kiwi fruit, peeled and diced
zest and juice of one lime
6 basil leaves finely shredded
3 tblspn olive oil or olive oil with lime
half tspn salt and black pepper to taste
Mix all ingredients in the bowl. fasten lid. Leave to steep for at least one hour. Toss before serving
