ORANGE AND BLACK CURRANT CAKE
Place all ingredients in a medium or large bowl
grate orange when frozen
defrost orange in microwave, then juice into a measuring cup
add milk to juice to make half cup of liquid. Add to bowl
1 duck egg or large chook egg
1 cup and 1 tblspn unbleached Sr. flour
third cup sugar
third cup yoghurt
3tblspn butter and one tblspn oil
half tspn mixed spice
Mix ingredients slowly to combine. Beat on high 3mins., until smooth
handful of currants. Fold into cake mix.
Pour into 80cm sandwich cake pan. Bake on moderate temp. for 25/30mins.
Note: Let the cakes cool to room temperature before sealing.
I place my cakes in a freezer bag and then wrap in alfoil before freezing.
