ORANGE AND PECAN CAKE
Place all of the ingredients in a medium to large bowl.
grate frozen orange.
defrost orange in microwave to soften (not cook)
squeeze juice into a measuring cup.
add milk to juice to make half cup of liquid. Place in bowl.
1 duck egg or large chook egg
1 cup and 1tblspn unbleached Sr.flour
2tblspn butter and 2 tblspn of Rice bran oil
1 tblspn yoghurt
3rd cup sugar (more if you want sweeter)
1 tblspn golden syrup
pinch of cinnanmon
handful of pecan nuts, ground
Mix slowly to combine ingredients. Then beat on high for three minutes.
Place in 80cm sandwich cake pan.
Bake at moderate temp., 25 mins
