An open cheesy egg sandwich filling
Ingredients
- 6 hard boiled eggs, chopped
- 3 tbs mayo/ aioli
- salt and pepper
- 1 tsp fresh parsley chopped
- 1 tbs parmesan cheese
- 1 small carrot grated
- 2 tbs grated cheese
Instructions
- In a bowl mix together, carrot grated, grated cheese
- Butter four slices of bread. Place a lettuce leaf on each slice. Top with carrot mix. Then with egg mix
