Blueberry and banana pancakes

Ingredients

self raising flour

large egg, beaten

ricotta cheese

ml
milk

very over ripe banana, crushed

tsp
caster sugar

cup
blueberries
Maple syrup and vanilla or greek yoghurt for topping
Instructions
Beat eggs, ricotta cheese, milk and sugar together
Add in flour
Add in banana
Fold in blueberries
Spray frying pan with vegetable oil. Cook pancakes over medium heat
