Ingredients

large potatoes
1
cup
mayo
1
tsp
curry powder
salt and pepper
1
red onion diced
½
cup
thinly slice celery
2
tbs
grated carrot
4
hard boiled eggs
Instructions
potatoes, peeled and placed in boiling water until tender
Drain, cool and chop into bite size pieces
Place in a bowl and pour over, 1/3rd cup french dressing. cover and chill
In a bowl blend together, mayo, curry powder, salt, pepper. Add onion diced, thinly slice celery, grated carrot
Fold in, potatoes. Gently fold in four hard boil eggs, chopped
Let stand for one hour. Serve on lettuce leaves
