Ingredients

snowpeas
Tailed and lightly steamed

small red onion
Sliced thinly

dried currants

cooking apple
Peeled and cut into long this sticks

tsp
lemon juice
1
tbsp
grape seed oil or rice bran oil
2
tsp
maple syrup
Instructions
In a bowl, toss apple, currants and red onion together.
Add dressing and toss. Fold in snow peas.
Serve on a bed of finely shredded lettuce.
Seasoning with salt and black pepper.
