Tomato and capsicum rice pilaf

Ingredients

olive oil
1
small chopped onion
2
cloves garlic minced

cup
red capsicum
¼
cup
green capsicum
1
cup
rice
1
cup
chopped tomatoes
2
cup
vegetable or chicken stock
1
tsp
thyme
1
tsp
oregano
salt and pepper
Instructions
Place pan with lid on low heat
Add olive oil, small onion, garlic minced, red capsicum and green capsicum
Sauté for 2-3mins
Add one cup of rice and stir to mix
Cook 2-3mins
Add chopped tomatoes
Add vegetable or chicken stock
Add thyme and oregano. Season with salt and pepper
Put life on pan and cook for 15-20mins over low heat until water is absorbed
Gently fork through. Return lid to pan and let stand for 5mins
