Ingredients
6-8
hard boiled eggs
Sauce

tbs
butter

cup
sliced celery

large
onion diced
½
red capsicum diced

tsp
curry powder

tbs
plain four
2
cup
milk
Topping
½
cup
soft white breadcrumbs
1
tbs
parmesan cheese
1
tbs
chopped chives or green shallots
Instructions
Sauce
melt butter in a saucepan over medium heat
Add sliced celery and onion, diced, red capsicum diced
Stir in curry powder and stir for 1 min
Sitr in plain flour to coat vegetables
Slowly add two cups of milk, a little at a time, allowing the sauce to thicken
Topping
In a bowl mix together soft white breadcrumbs, parmensan cheese, chopped chives or green shallots
Method
6 to 8 hard-boiled eggs, cut into halves, lengthways and place in a greased oven dish
Slowly pour sauce on top
Sprinkle on bread topping. Bake moderate oven for 20mins
Serve with rice or salad or baked vegetables
