Curried egg bake
Ingredients
- 6-8 hard boiled eggs
Sauce
- 2 tbs butter
- 1 cup sliced celery
- 1 large onion diced
- ½ red capsicum diced
- 1 tsp curry powder
- 3 tbs plain four
- 2 cup milk
Topping
- ½ cup soft white breadcrumbs
- 1 tbs parmesan cheese
- 1 tbs chopped chives or green shallots
Instructions
Sauce
- melt butter in a saucepan over medium heat
- Add sliced celery and onion, diced, red capsicum diced
- Stir in curry powder and stir for 1 min
- Sitr in plain flour to coat vegetables
- Slowly add two cups of milk, a little at a time, allowing the sauce to thicken
Topping
- In a bowl mix together soft white breadcrumbs, parmensan cheese, chopped chives or green shallots
Method
- 6 to 8 hard-boiled eggs, cut into halves, lengthways and place in a greased oven dish
- Slowly pour sauce on top
- Sprinkle on bread topping. Bake moderate oven for 20minsServe with rice or salad or baked vegetables
