Ingredients

steam or roasted sweet potato
Cut into mouth size chunks

walnuts
Lightly chop in a food processor

tbsp
lemon oil
¼
cup
sherry
3
tbsp
ginger marmalade
fresh black pepper and salt
Instructions
In saucepan add lemon oil, sherry, ginger marmalade and season with fresh black pepper and salt
Stir to combine. Cook over low heat until sauce slightly thickens
Pour over warm sweet potatoes and gently toss to combine
Sprinkle with chopped walnuts
