
Sherry ginger sweet potatoes
Ingredients
- 500 g steam or roasted sweet potato Cut into mouth size chunks
- ¼ cup walnuts Lightly chop in a food processor
- 1 tbsp lemon oil
- ¼ cup sherry
- 3 tbsp ginger marmalade
- fresh black pepper and salt
Instructions
- In saucepan add lemon oil, sherry, ginger marmalade and season with fresh black pepper and salt
- Stir to combine. Cook over low heat until sauce slightly thickens
- Pour over warm sweet potatoes and gently toss to combine
- Sprinkle with chopped walnuts
