onion, diced

potato, peeled and diced

celery, chopped

dried tarragon

chicken stock

cream
salt and pepper to taste

olive oil
Instructions
In a large saucepan, heat oil over low heat.
Add onion and celery.
Cook 1 min.
Add vegetables.
Cook 2mins.
Add stock.
Add tarragon and seasonings.
Cook 20mins.
Strain off 1/2 cup stock.
Puree soup.
Stir in reserved soup stock and cream.
Adjust seasonings.
