
Turnip and tarragon soup
Ingredients
- 4 medium turnips, peeled and chopped
- 1 large onion, diced
- 1 medium potato, peeled and diced
- 1 stick celery, chopped
- ½ tbsp dried tarragon
- 4 cups chicken stock
- 1 tbsp cream
- salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large saucepan, heat oil over low heat.
- Add onion and celery.
- Cook 1 min.
- Add vegetables.
- Cook 2mins.
- Add stock.
- Add tarragon and seasonings.
- Cook 20mins.
- Strain off 1/2 cup stock.
- Puree soup.
- Stir in reserved soup stock and cream.
- Adjust seasonings.
