
Honey Lemon Snowpeas
Ingredients
- 200 g snowpeas Tailed and lightly steamed
- 1 small red onion Sliced thinly
- 1 tbsp dried currants
- 1 cooking apple Peeled and cut into long this sticks
- 1 tsp lemon juice
- 1 tbsp grape seed oil or rice bran oil
- 2 tsp maple syrup
Instructions
- In a bowl, toss apple, currants and red onion together.
- Add dressing and toss. Fold in snow peas.
- Serve on a bed of finely shredded lettuce.
- Seasoning with salt and black pepper.
