
SWEET POTATOES IN CURRIED COCONUT MILK
Ingredients
- 600 g sweet potatoes peeled and cut into chunks
- 2 cloves garlic
- 1 tbsp green curry paste
- pinch cinnamon
- 1 tbsp honey
- 1 lime
- 400 ml coconut milk
- 1 kaffir lime leaf
- sugar and salt to taste
- 1 tbsp chopped coriander or Thai basil
Instructions
- Cook the sweet potatoes
- Mix garlic with green curry paste, pinch cinnamon, honey and juice of one lime
- Place in pan and cook for one minute
- Stir in coconut milk and one kaffir lime leaf. Sugar and salt to taste
- Cook over medium heat for about 10mins
- Remove kaffir lime leaf
- Stir in sweet potato and chopped coriander or Thai basil
- Serve with hot rice
