
Pumpkin and apple soup
Ingredients
- 30 g butter
- 1 large onion, peeled and chopped
- 1 large potato, peeled and chopped
- 500 g pumpkin, peeled and chopped
- 3 cups chicken stock
- ¼ tbsp ground nutmeg
- 2 tbsp ground coriander
- ½ cup cream
Instructions
- Melt butter in large saucepan over moderate heat.
- Add onion and coriander.
- Cook 3mins.
- Add potato, pumpkin, stock and nutmeg.
- Cook until tender.
- Strain off 1/2 cups of the stock.
- Put remainder of soup in a blender until smooth.
- Return to saucepan.
- Add cream and strained stock.
- Reheat.
