Ingredients
  

  • 300 g carrots peeled and thinly sliced

Glaze

  • 2 tbs brown sugar
  • 2 tsp butter
  • 2 tbs honey
  • salt and pepper

Instructions
 

  • Cook carrots until tender in a saucepan with water, steam or microwave

Glaze

  • Combine, sugar, butter, honey and seasoning in a saucepan over low heat
  • Stir to blend
  • Remove from heat
  • Toss in carrot. Serve

Ingredients
  

  • 3 large tomatoes, thinly sliced
  • 1 onion thinly sliced
  • 1 clove garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried marjoram
  • 1 tbs butter
  • 2 tbs parmesan cheese

Instructions
 

  • Over  low heat, melt butter in a pan
  • Add onion slices and toss to coat. Cook 1min
  • Add garlic. Cook 1min
  • In a greased casserole dish, layer tomato slices and onion slices. Sprinkle dried herbs, salt and pepper on each layer.  Sprinkle cheese on top
  • Cook in moderate oven for ten minutes

Easy tomato sauce

Suitable to mix with pasta. Sauce for chicken, sausages and beef

Ingredients
  

  • 1 tbs olive oil
  • 1 tsp dried onion powder
  • 1 tsp dried garlic powder
  • 1 tbs tomato paste
  • 1 tbs dark brown sugar
  • 1 tsp dried basil
  • 400 g can tomato pieces

Instructions
 

  • Blend ingredients in a food processor
  • Place in saucepan over low heat, bring to a simmer
  • Remove from heat and let cool
  • Store in fridge in a sealed jar

Orange sauce

Ingredients
  

  • 2 oranges juiced
  • 1 orange rind
  • ¼ cup water
  • 1 tbs dark brown sugar
  • 1 tbs honey
  • 1 tbs apple cider vinegar
  • salt and pepper

Instructions
 

  • Place all ingredients, except rind in a saucepan, bring to a simmer
  • Stir in rind
  • Remove from heat
    Can be store in the fridge in a sealed jar for a a few days

Ingredients
  

  • 1 cup zucchini grates
  • ½ cup onion diced
  • 1 clove garlic
  • 1 tsp sweet chilli sauce
  • 1 tsp corn flour
  • 2 eggs beaten

Instructions
 

  • In a bowl, mixed vegetables and sweet chilli sauce
  • Mix egg and cornflour together
  • Add to vegetables
  • Heat a fry pan over medium heat. Grease
  • Add one tbs mix to pan
  • Cook both sides
  • Serve with sausages, fried egg. Great as a snack

  • 1 tsp orange zest
  • 2 tbs orange juice
  • 1 tsp honey

  • 2-3 zucchini diced
  • 1 tbs basil chopped

  • In a pan over low heat add olive oil, orange zest, orange juice,honey, salt and black pepper
  • Add zucchini, diced.   Cook 1- 3 mins
  • Add basil.  Serve while warm

  • 2 thinly slice zucchini
  • 1 tbs chopped chives
  • 1 tbs shredded parmesan cheese

Instructions
 

  • In a pan melt together butter and olive oil over low heat
  • add garlic
  • add zucchini and toss to mix. Cook 2- 3 mins
  • add chives, salt and pepper.  Cook 1 -2mins
  • add shredded parmesan cheese.  Toss to mix
  • Serve with omelette, meats, seafood or green salad. Or toss with one cup of cooked pasta

  • 4 tbs butter
  • 1 tbs olive oil
  • 5 garlic cloves minced
  • salt and pepper
  • ½ tsp smoked paprika
  • 1 cabbage

Instructions
 

  • Preheat oven 200c (400F). Line a baking disk with lightly greased parchment paper
  • Melt all the ingredients together
  • Cut a cabbage into wedges. Brush thoroughly with butter sauce. Roast for 25mins. Cabbage is tender when pierced with a fork

  • 1 medium apple peeled and diced
  • 1 tbs sage, finely chopped
  • ½ cup chicken stock
  • 1 tbs sesame seeds, toasted

Instructions
 

  • melt olive oil and butter together in pan that has a lid, over medium heat
  • add onion, celery, garlic, apple, sage, chicken stock
  • Cook over low heat until cabbage is tender and liquid is absorbed
  • Serve cabbage, with toasted sesame seeds sprinkled on top
