Ingredients
  

  • 2 large potatoes, peel and sliced thinly
  • ½ cup chicken or vegetable stock
  • butter

Instructions
 

  • Place a layer of potatoes in a fry pan that has a lid
  • Dot with layer with butter, season with salt and pepper
  • Repeat for each layer
  • Add chicken stock slowly and carefully
  • Cook over low heat for 15-20mins
  • Checking that it had not boiled dry. If dry, add two tbs.water
  • Scoop potatoes out of pan with an egg flip. Serve with omelette, meat, seafood or green salad

Ingredients
  

  • 1 tsp honey
  • 2 tsp apple juice concentrate
  • 1 tsp apple cider vinegar
  • 2 tbs olive oil
  • ½ tsp dijon mustard
  • salt and pepper

Instructions
 

  • Place all ingredients in jar with lid. Shake to mix. Season with salt and black pepper
  • Suitable for a tuna salad or green salad

Ingredients
  

  • 2 tbs water
  • 2 tbs cornflour
  • 1 cup fresh orange juice
  • 2 tbs balsamic vinegar
  • ½ tsp garlic powder
  • ½ tsp dried tarragon

Instructions
 

  • mix together water and cornflour
  • Place the ingredients in a saucepan
  • Bring to boil and stir until thickened
  • Take off heat. Can be stored in Fridge for up to seven days

  • 6 cloves garlic crushed
  • 3 tbs chopped coriander leaves
  • 2 tbs sweet chilli sauce
  • ½ cup lemon juice
  • ½ asian fish sauce
  • 3 tbs honey

Instructions
 

  • Warm the ingredients in a pan over low heat for 2mins
  • Stir in  3 or more tablespoons of Honey slowly, to taste
  • Place in jar and store in fridge
  • Serve over seafood, pork, chicken or stir fried or steamed vegetables

Ingredients
  

  • 1 tbs olive oil
  • 1 tbs butter
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup rice
  • ½ lemon juice
  • ½ lemon rind
  • ½ chicken or vegetable stock
  • ½ tsp dried basil
  • ½ tsp dried dill
  • ½ tsp dried thyme
  • salt and pepper
  • 2 tbs parmesan cheese

Instructions
 

  • Place pan with lid on low heat
  • Add olive oil and butter
  • Add onion chopped, garlic minced. Cook 2mins
  • Add rice. Sauté 3-4mins
  • Add lemon juice, rind of half lemon, chicken or vegetable stock, dried basil dried dill, dried thyme.  Season with salt and pepper
  • Place lid on pan. Cook for 15-20mins until all liquid is absorbed.
  • Stir in parmesan cheese
  • Place lid on pan and stand for 3mins

Tomato and capsicum rice pilaf

Ingredients
  

  • 1 tbs olive oil
  • 1 small chopped onion
  • 2 cloves garlic minced
  • ¼ cup red capsicum
  • ¼ cup green capsicum
  • 1 cup rice
  • 1 cup chopped tomatoes
  • 2 cup vegetable or chicken stock
  • 1 tsp thyme
  • 1 tsp oregano
  • salt and pepper

Instructions
 

  • Place pan with lid on low heat
  • Add olive oil, small onion, garlic minced, red capsicum and green capsicum
  • Sauté for 2-3mins
  • Add one cup of rice and stir to mix
  • Cook 2-3mins
  • Add chopped tomatoes
  • Add vegetable or chicken stock
  • Add thyme and oregano. Season with salt and pepper
  • Put life on pan and cook for 15-20mins over low heat until water is absorbed
  • Gently fork through. Return lid to pan and let stand for 5mins

  • 200 g snow peas
  • ¼ cup toasted pine nuts
  • 1 clove garlic, minced
  • 2 tbs olive oil
  • 1 tsp lemon or lime juice
  • 1 tsp runny honey
  • 8 chopped mint or spearmint leaves

Instructions
 

  • heat olive oil in pan
  • add snow peas and garlic. Cook 1-2mins
  • add lemon juice and honey
  • toss in toasted pinenuts
  • Take off heat. Add chopped mint. Serve immediately

  • ½ red capsicum diced
  • 250 g snow peas, cut into thin pieces, lightly cooked in microwave
  • 1 tbs mint chopped
  • 1 tbs parsley chopped
  • 1 tbs almonds and sesame seeds, toasted

Marinade

  • 1 tbs rice vinegar
  • 1 tbs sweet child sauce
  • 1 tbs soy sauce
  • 1 tbs sesame oil
  • 1 clove garlic, minced
  • 1 tsp ginger, minced
  • 2 tsp caster sugar or coconut sugar

Instructions
 

  • Place all ingredients and toss gently
  • Place marinade ingredient in a sealed container. Shake until blended

  • ½ tsp cinnamon

Instructions
 

  • Mix dry ingredients in a large bow or jug 
  • Mix wet ingredients in a bowl
  • Add wet ingredients to dry ingredients and beat until smooth
  • Cook over medium heat
