Ingredients
  

  • 1 tbs butter
  • 2 tsp yoghurt
  • 2 tbs dark brown sugar
  • 400 g pineapple, sliced or chopped

Instructions
 

  • In a pan, over low heat, melt butter and yoghurt together
  • Add dark brown sugar
  • Place pineapple in the pan and toss in the sauce until browned
  • Roll up pancakes with pineapple as a filling, top with whipped cream and melted dark chocolate.
    Top a waffle with caramel pineapple and a scoop of vanilla or passionfruit ice cream

  • 1 cup strawberries, chopped into chunks
  • 1 tbs butter
  • 1 tbs rum
  • 1 tbs lemon juice
  • 1 tbs icing powder
  • 2 tbs cream

Instructions
 

  • Place in blender all the ingredients
  • Serve with jelly, pancakes, waffles, ice cream or cheesecake

Ingredients
  

  • 1 cup berries
  • 1 tsp lemon juice
  • 1 tbs sugar
  • cup almond meal
  • 2 tbs soft butter
  • ¼ tsp vanilla extract
  • ¼ cup shredded coconut
  • 1 tbs crushed almond flakes

Instructions
 

  • In a bowl mix together berries, lemon juice, sugar
  • Place in baking dish
  • Topping: In a large bowl, almond meal, soft butter, vanilla extract
  • Fold in shredded coconut and crushed toasted almond flakes
  • Spread topping over berry mix
  • Cook at 165c for 20/25mins. Let cool ten mins. Serve with ice cream or whipped cream

  • ¼ cup melted butter
  • ½ cup almond milk
  • 2 large eggs
  • 2 tbsp vanilla extract
  • ½ cup brown sugar
  • 2 tbsp cinnamon
  • ½ tbsp baking powder

Instructions
 

  • Preheat oven to moderate  temp. Grease and Line square pan 8” x 8
  • In a large bowl mix together the ingredients
  • Stir in 3 cups rolled oats
  • Fold in 2 cups berries to combine
  • Bake 30/40mins moderate oven

  • 1 tbsp blueberries
  • 2 tbsp strawberries chopped
  • ½ sweet orange juice
  • 1 tbsp runny honey

Instructions
 

  • Place ingredients into a bowl. Gently toss. Allow to marinate for one hour
  • Divide the mixture between two tall glasses. Top with mineral water or lemonade

Ingredients
  

  • ¼ cup long grain white rice
  • ½ tbsp cumin
  • 1 tbsp coriander
  • ¼ tbsp ground cloves
  • 2 tbsp grated fresh ginger
  • 1 grated clove of garlic
  • 1 orange grated rind
  • 1 orange juice
  • 1 onion diced finely
  • ½ cup celery, sliced finely
  • 1 medium courgette diced finely

Instructions
 

  • Over low heat Melt Two Tablespoon of Butter with One Tablespoon of oil (not olive)
  • Add, rind, and spices.  Warm and stir gently for one minute
  • Add rice, stir to coat with spices. Cook gently for three mins
  • Add onion and celery
  • Add currants
  • Add juice and stock. Cover pan with lid. Simmer over low heat until rice is tender and moisture is absorbed
  • Stir in Courgette.  Cook one min.  Turn off heat and let rice stand for three to five minutes

Ingredients
  

  • 2 large red onion thinly sliced
  • 1 tbsp grain mustard
  • 2 tbsp olive oil
  • large pinch of grated lemon rind
  • 2 bay leaves
  • 5 spring of thyme
  • 1 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 cup chicken or veggie stock
  • 1 one clove garlic crushed
  • salt and black pepper

Instructions
 

  • Over low heat warm oil. Cook onions, lemon rind and garlic until soft
  • Add flour. cook 2mins
  • Add half stock slowly as sauce thickens
  • Add mustard, honey and vinegar,. Add remaining stock
  • Stir and cook slowly until sauce thickens
  • Add herbs, salt and black pepper
    Hint: good sauce for seafood, steams veggies, chicken and pork

Ingredients
  

  • 50 g butter
  • 225 g onions chopped
  • ¼ cup plain four
  • 250 ml whole milk
  • 1 tbsp parsley chopped
  • 2 tbsp dijon mustard
  • 2 fresh bay leaves
  • salt and black pepper

Instructions
 

  • Over a low temperature melt butter and cook onions until soft. Do not brown
  • Stir in flour and cook for two minutes
  • Slowly add 1 cup of milk  and stir until sauce is thick
  • Stir in mustard
  • Slowly add remaining milk
  • Add Bay leaves, salt and black peppers
  • Cook over low heat for 10-15mins. Stir in parsley
  • This can be used as a sauce for boiled potatoes, cauliflower bake,  fish, chicken, pork.
    Hint: par-boil cauliflower, drain. Place in oiled dish. Pour over onion sauce. Top with grated cheese. Cook in moderate oven for 20mins. 
    Hint: Add a small can of tuna drained. Serve with cooked pasta. Top with grated parmesan cheese.
    Hint:  Add one quarter cup of cream, a handful of sliced mushrooms, one cup of shredded cooked chicken. Over low heat cook for 2 mins. Serve with hot rice.

  • 1 large brown onion
  • 1 garlic clove

  • 1 tbsp parmesan cheese

Instructions
 

  • Slice large red onion, a bunch of spring onion and large brown onion
  • In a bowl, toss onions together with fresh black pepper, pinch of salt
  • Mince one garlic clove
  • Over low heat, in a large pan melt tablespoon of butter with honey
  • Add onions and garlic
  • Toss to coat
  • Cook gently until softened
  • Mix Mayonnaise with white wine
  • Stir into onions
  • Cook pasta
  • Toss with onions and parmesan cheese

  • 3 large onions cut in thick slices
  • 2 tbsp butter
  • 3 tbsp Mable syrup
  • 1 tbsp balsamic vinegar
  • salt and pepper

Instructions
 

  •  Heat a pan over low heat melt butter, add onions and cook until tender
  • Quickly stir maple syrup, balsamic vinegar, salt and black pepper
  • Toss gently to blench
  • Serve immediately. Suitable for freezing
