Ingredients
  

  • 1 glove garlic minced
  • ¼ cup mayonnaise
  • ¼ light sour cream
  • 3 tbs double cream
  • black pepper

Instructions
 

  • Toss mint with cucumbers
  • Combine dressing mix in a small bowl, whisk until combined
  • Gently fold dressing into cucumber and mint. Chill for 15 mins before serving

Ingredients
  

  • 3 cucumbers, peeled, sliced
  • cup white vinegar
  • ½ sugar
  • Pinch of black pepper

Avocado dressing

  • 1 avocado
  • ¼ cup cream
  • ¼ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped

Instructions
 

  • Combine cucumber, vinegar and sugar in a bowl.
  • Stand 20mins.
  • Drain.
  • Combine cucumber with dressing and serve immediately.

Dressing

  • Blend dressing ingredients until smooth.

Lemon-pine quencher

Ingredients
  

  • 2 cups pineapple juice, unsweetened
  • ½ cup caster sugar
  • ½ cup lemon juice
  • 1 cup mineral water

Instructions
 

  • Combine pineapple juiced caster sugar until sugar has dissolved.
  • Add lemon juice.
  • Chill.
  • When ready to serve, add mineral water, stir.

Avocado and prawn salad

  • 1 kg prawns, cooked
  • 1 oak or mignonette lettuce
  • 2 avocado, sliced
  • 2 tbsp chives, chopped

Dressing

  • 1 cup mayonnaise
  • 2 tbsp lemon or lime juice
  • 1 tbsp sweet chili sauce
  • 1 clove garlic

Instructions
 

  • Place lettuce on six serving plates, top with prawns and avocado slices, the mayonnaise mix. Garnish with chives.

Ingredients
  

  • 2 tbs mayo or aioli
  • 1 lemon or lime
  • 2 tsp grated parmesan cheese
  • black pepper
  • 2 tbs chopped chives
  • 2 avocado peeled and ripe

Instructions
 

  • In a bowl mix mayo or aioli, squeeze of lime or lemon juice, grated parmesan cheese, black pepper and chopped chives
  • Cut two peeled, ripe  avocado into chunks
  • Toss in the mayo mix
    Serve on a lettuce leaf, with battered or  steamed fish

Ingredients
  

  • 3 duck eggs
  • ¼ cup milk
  • ½ cup grated tasty cheese

Instructions
 

  • Heat eggs until hot
  • Beat eggs in a bowl and whisk through hot milk and cook over low heat until a custard consistency
  • Gently stir in cheese
  • Pour over vegetables or seafood, or minced beef and vegetables.  Bake in moderately hot oven for 15 – 20 mins
